One thing I’m guilty of is forgetting the veg whenever it’s time to BBQ… that’s usually a sacred time dedicated to the celebration of meat and more meat… but these Chicken Skewers were a great way to have my meat and veg together and not tase like crap. I am NOT an onion guy so I skipped over the red onion for my own, and the red onion I got was a bit too strong for my partner… feel free to change things up if you’re anything like me, but here is the recipe for you to try for yourself.
Grilled Chicken and Veggie Skewers:
Ingredients:
1 lb (450g) skinless, boneless chicken breast
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 cup cherry tomatoes
1 red onion
1 zucchini or squash
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon fresh herbs (thyme, rosemary, or basil)
Salt and pepper to taste
Instructions:
Cut the chicken and vegetables into bite-sized pieces.
Thread them alternately onto skewers.
Mix olive oil, lemon juice, herbs, salt, and pepper in a bowl to make the marinade.
Coat the skewers with the marinade and let them sit for 20-30 minutes.
Grill the skewers until the chicken is cooked through and the vegetables are tender.
