Today I’m trying something new for breakfast, Banana-Oat Protein Pancakes… I was shocked at how easy they were to actually make! Also shocked that they weren’t terrible! As with any food that is high in protein, these are pretty filling. Recipe below… REMEMBER! A yellow banana isn’t a “ripe” banana… The best flavor comes out when those things are spotty as a leopard, and that’s also when they are best for pancakes.
Banana-Oat Protein Pancakes: Ingredients:
- 2 Ripe bananas
- 1 cup Rolled oats
- 1/2 cup Greek yogurt
- 2 Eggs
- 1 tsp Baking powder
- 1/2 tsp Cinnamon
- 1 tsp Vanilla extract
- Fresh berries for topping
Instructions:
- In a blender or food processor, blend the bananas, oats, Greek yogurt, eggs, baking powder, cinnamon, and vanilla extract until smooth.
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray.
- Pour the pancake batter onto the skillet to form small pancakes.
- Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Serve with fresh berries on top.
